A week in pictures...

I bought flowers yesterday. They always make me feel better...

It has been a while since J* cooked anything at home. When he finally did it tasted so good that I forgave him.

Pan fried sea bass on a bed of frizze lettuce and boiled egg.

It was easy for J* to make this dish at home, because they serve it at the restaurant he is currently working.

The dish is very light ...and fresh...and it is topped with vierge dressing.

Vierge dressing goes particularly well with fish and is easy to make at home. All you need is :

freshly squeezed lemon
1 finely chopped shallot
 chopped parsley
2 chopped tomatoes without seeds
about 50ml of olive oil
pepper, salt,
1 garlic clove
mix all ingredients together, pour on the fish when is ready.

While I was eating I was thinking about our little trip to the village few days ago...we went to see
the boats...

Cut the aubergine half along it's length, and scoop out the flesh and chop it finely.Preheat the oven to 180 degrees and bake half's aubergines with olive oil for about 20 min.Saute chopped aubergines flesh, onions, potatoes, peppers, olives, capers.Add some spices.Next stuff half's aubergines with vegetable mix and crumble feta cheese on top.Bake for another 10 min in the oven. When it's ready squeeze some lemon juice.
Enjoy.

Lola says...Cheese!

I love any type of cheese but my favorite one is Stilton. I know that some people hate it but I eat it all the time and always have some in my fridge. This time I ate it together with Camembert and home made cranberry sauce with fresh parsley accompanied with some granary baguettes. Heaven in my mouth.

Rosemary bread

Italian people would call it "Focaccia al rosmarino", but I call it "rosemary bread"...sounds good too... and taste the same. This rosemary bread is a bit different because J added some sun dried tomatoes and artichoke, which I adore. You should definitely try to bake it for Christmas, it really tastes delicious and also brings a lovely smell to the kitchen. You will find a good recipe in "The Italian cookery course" book by Katie Caldesi.

Food is good!

Oven baked salmon and pan seared scallops
with crispy baby potatoes,spinach,
cherry tomatoes and salsa -verde.

Believe me, it is a very simple dish  you can make at home with a little bit of imagination and patience. But don't ask me how it is done because I didn't make it ...It was J again  ha ha.I'm lucky he is a chef...I can only tell you how to make a good salsa -verde.
Here is the recipe:
  • 120g olive oil
  • 30g flat leaf parsley
  • 1 tablespoon capers, drained and rinsed
  • 1 tablespoon lemon juice
  • 1 garlic clove
  • 5 anchovy fillets
  • salt and freshly ground black pepper
  • 1 mint leaf
Prepare salsa -verde by combining and blending all the ingredients in a food processor.Adjust seasoning to taste and set aside.Enjoy your food.
